Chicken in a Tray

This delicious juicy chicken is marinated overnight in a succulent garlic sauce then baked until beautifully tender with zesty lemon wedges. The aroma that fills the air will captivate your taste buds and the outcome is simply a treat!

Ingredients

  • 4 split chicken breasts each cut in half width-wise
  • 2 tbsp apple cider vinegar
  • 5 large garlic cloves minced
  • Salt to taste
  • 1/2 tsp paprika
  • 1 tsp allspice
  • Zest and juice of 2 lemons
  • 2 tbsp olive oil
  • 2 full lemons cut into wedges
  • 1/2 cup garlic cloves cut in half lengthwise

Instructions

  1. Tap the chicken breasts with the vinegar then rinse with cold water.
  2. Dry with a kitchen towel and set aside.
  3. In a bowl, place the minced garlic with the salt, paprika, allspice, lemon zest and juice and the olive oil. Mix well and add the chicken pieces.
  4. Fully coat them with the marinade. Cover the bowl tight and place it in the fridge. Let the chicken marinate overnight or up to 2 days.
  5. Preheat the oven to 450 degrees F (230 C).
  6. Transfer the chicken pieces to a baking dish and place the lemon wedges and the garlic pieces in between them.
  7. Bake in the heated oven for 40 to 45 minutes until tender.
  8. Turn the broiler on and let the chicken pieces turn golden.
  9. Remove from the oven and let rest for 10 minutes.

Notes

Serve with baked fries and a salad of your choice.
