Mango Chocolate Cake

Ingredients
For the sponge cake
- 1 1/2 cups all purpose flour
- 3/4 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup vegetable oil
- 1 1/2 cups sugar
- 2 eggs
- 1/2 cup milk
For the frosting
- 1 cup powdered sugar
- 1/4 cup cocoa powder
- 1/2 cup cream cheese softened
- 1/4 cup unsalted butter softened
For the garnish
- 3 mangoes peeled and sliced
Instructions
- Preheat the oven to 375 degrees F (190 C).
- Line an 8-inch pan with parchment paper.
- In a bowl, sift together the flour, cocoa powder, baking powder and baking soda.
- In the bowl of an electric mixer, mix the sugar with the oil until pale.
- Add the eggs one at a time then mix in the milk.
- Fold in the dry ingredient mixture and pour the batter in the prepared pan.
- Place the cake in the heated oven and bake for 30 to 40 minutes until a toothpick inserted in the center of the cake comes out clean.
- Take the cake out of the oven and let cool.
- Prepare the frosting.
- Sift the sugar with the cocoa powder in a bowl.
- With an electric mixer, whisk the cream cheese with the butter until the mixture is light and fluffy.
- Slowly and while the mixer is running, mix in the sugar cocoa mixture and whisk until smooth.
- Top the cake with the frosting then arrange the mango slices over the frosting to form a flower.
- Place in the fridge till you want to serve. Slice and enjoy!
