Mango Chocolate Cake

Ingredients

For the sponge cake
  • 1 1/2 cups all purpose flour
  • 3/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 eggs
  • 1/2 cup milk
For the frosting
  • 1 cup powdered sugar
  • 1/4 cup cocoa powder
  • 1/2 cup cream cheese softened
  • 1/4 cup unsalted butter softened
For the garnish
  • 3 mangoes peeled and sliced

Instructions

  1. Preheat the oven to 375 degrees F (190 C).
  2. Line an 8-inch pan with parchment paper.
  3. In a bowl, sift together the flour, cocoa powder, baking powder and baking soda.
  4. In the bowl of an electric mixer, mix the sugar with the oil until pale.
  5. Add the eggs one at a time then mix in the milk.
  6. Fold in the dry ingredient mixture and pour the batter in the prepared pan.
  7. Place the cake in the heated oven and bake for 30 to 40 minutes until a toothpick inserted in the center of the cake comes out clean.
  8. Take the cake out of the oven and let cool.
  9. Prepare the frosting.
  10. Sift the sugar with the cocoa powder in a bowl.
  11. With an electric mixer, whisk the cream cheese with the butter until the mixture is light and fluffy.
  12. Slowly and while the mixer is running, mix in the sugar cocoa mixture and whisk until smooth.
  13. Top the cake with the frosting then arrange the mango slices over the frosting to form a flower.
  14. Place in the fridge till you want to serve. Slice and enjoy!
