Walnut Ma3moul Tart

Ma3moul is a Levantine shortbread cookie filled with either date, walnut or pistachio. No middle eastern holiday is complete without it. This version is a tart-style stuffed with a mix of walnut, sugar and aromatic rose water. The fragrance while baking will please your senses, and the flavor while crumbling under your teeth will tempt your taste buds to ask for more!

Ingredients

For the crust
  • 3 cups semolina
  • 2 cups flour
  • 1 cup powdered sugar
  • 3/4 cup vegetable oil
  • 1 cup milk
  • 1/2 cup melted butter
  • 3 tbsp rose water
For the filling
  • 3 cups raw walnuts chopped
  • 1 1/2 cups sugar
  • 3 tbsp rose water

Instructions

  1. Preheat the oven to 400 degrees F (200 C).
  2. Grease a tart pan with some butter and set aside.
  3. Prepare the crust: In a bowl, mix the semolina with the flour, powdered sugar, oil, milk, melted butter and rose water. Knead with your wet hands until you get a dough. Divide the dough into two equal portions.
  4. Prepare the filling by mixing the walnut with the sugar and rose water.
  5. With your wet hand, press the first portion of the dough into the bottom of the greased tart pan and along the sides.
  6. Spread the filling evenly over the dough.
  7. Top the filling with the second portion of dough shaping small round discs and patching them together until you get a smooth connected layer.
  8. With a fork, trace faint vertical lines on the surface.
  9. Place the pan on a baking sheet lined with parchment paper.
  10. Bake in the heated oven for around 25 minutes or until golden.
  11. Remove from the oven and let cool completely.
  12. Slice, serve and enjoy!
