Custard Biscuit Pudding

Growing up, we always had some kind of pudding in our fridge. My mother wanted to make sure that we had a homemade treat or dessert whenever we felt like it. This one is my favorite!

Two flavors of custard alternate with a layer of biscuits that soften and blend in perfectly with the pudding. Every spoonful is velvety, uplifting and loaded with nostalgic memories.

Ingredients

For the vanilla custard:
  • For the vanilla custard:
  • 4 cups milk of choice
  • 3 tablespoons sugar
  • 8 tsp custard powder
  • For the chocolate custard:
  • Use chocolate milk
  • Round biscuits like Marie or Digestive

Instructions

  1. Place 3 cups of milk in one saucepan and add the sugar.
  2. Bring to a boil while stirring frequently.
  3. Mix the custard with the remaining 1 cup of cold milk.
  4. Add to the boiling milk/sugar mixture and whisk until it thickens.
  5. Pour in a tray or individual cups and top with the biscuits.
  6. Repeat the same process with the chocolate milk.
  7. Pour over the biscuits and let cool completely at room temperature. Cover with plastic wrap and transfer to the fridge. Chill for at least 2 hours.
  8. Serve and enjoy!
