Savory Halloumi Scones
These savory scones are the perfect option for an easy breakfast. Studded with halloumi cheese bites and aromatic mint and basil leaves, they are richly flavored, fluffy and have a tender crumb. Serve them right out from the oven and enjoy a treat that tastes like a warm hug!
Savory Halloumi Scones
Yield: 8 medium scones
Ingredients
- 2 cups flour
- 1 tbsp baking powder
- 1/2 cup cold butter cut into small pieces
- 1 cup halloumi cheese cut into cubes
- 1/4 cup fresh mint and basil leaves
- 1 egg beaten
- 2/3 cup buttermilk
Instructions
- Preheat the oven to 400 degrees F (200 C).
- Line a baking sheet with parchment paper.
- In the bowl of an electric mixer with the hook attachment on, mix the flour with the baking powder (if you don’t have a mixer, you can knead with your hands).
- Add the butter and mix or knead until you get a coarse meal mixture. Mix in the halloumi and the herbs.
- In a separate bowl, mix the egg with the buttermilk and add to the flour mixture.
- Knead until you get a workable dough.
- Take 8 equal pieces from the dough and shape them into free-form scones.
- Place on the prepared sheet and bake in the heated oven for 20 minutes or until golden.
- Serve warm with your favorite jam, wrap the leftovers in foil and heat them up in the oven when ready to have them again.
