Chicken Paprikash

This is a rich Hungarian dish where the chicken is cooked until tender in a delectable flavorful paprika sauce. It is the ultimate comfort food for cold rainy weather!

Chicken Paprikash

Ingredients

  • 4 chicken breasts
  • 1/2 onion finely chopped
  • 6 garlic cloves minced
  • 4 Roma tomatoes finely chopped
  • Salt and pepper to taste
  • 3 tbsp sweet paprika
  • 4 cups chicken stock
  • 3/4 cup sour cream (I used Greek yogurt instead for a healthier option).
  • Chives or cilantro for garnish

Instructions

  1. Heat a large nonstick pan on high.
  2. Sprinkle the chicken breasts with salt and pepper and add them to the pan.
  3. Lower the heat to medium and cook the chicken for about 5 minutes on each side until golden.
  4. Remove from the pan and set aside.
  5. Add the onion and cook it in the juice that was released from the chicken. Stir occasionally until it caramelizes.
  6. Stir in the garlic and cook for another minute until fragrant.
  7. Add the chopped tomatoes and cook for 5 minutes.
  8. Sprinkle the mixture with salt and pepper to taste then with the paprika. Stir until combined.
  9. Return the chicken breasts to the skillet.
  10. Pour the chicken broth. Bring to a boil and let simmer covered until tender.
  11. Mix the yogurt or sour cream with 1/2 cup liquid removed from the pan. Whisk until well combined and smooth.
  12. Remove the cooked chicken from the pan and stir in the yogurt mixture.
  13. Whisk until it comes to a boil then let simmer until it thickens.
  14. Return the chicken to the pan and cook the whole thing for another 5 minutes.
  15. Serve the chicken paprikash topped with a dollop of Greek yogurt or sour cream and drizzled with chives or cilantro.
