Butternut Squash Chicken Curry
This is a beautiful aromatic Curry that is mild and comforting. Chicken pieces are cooked until tender and sweet butternut squash chunks melt beautifully through the sauce creating an explosion of flavors for your taste buds!
Butternut Squash Chicken Curry

Ingredients
- 1 onion finely chopped
- 2 pounds boneless skinless chicken breasts cut into big pieces
- Salt and pepper to taste
- 1/2 tsp paprika
- 2 cups fresh cilantro leaves
- 5 garlic cloves
- 1/2 cup shelled raw pistachios
- 1 tbsp shaved fresh ginger
- 1 cup strained tomatoes
- 1 tsp curry powder
- 1 tsp turmeric
- 2 cups chicken broth
- 1 pound butternut squash cut into chunks
Instructions
- Heat a large saucepan and add the onion.
- Lower the heat and stir frequently until it is translucent.
- Sprinkle the chicken breasts with salt, pepper and paprika and add to the onion.
- Cook for 2 minutes on each side.
- Meanwhile, place the cilantro, the garlic, the pistachios and the ginger in a blender, cover with water and blend until you get a smooth green mixture.
- Pour the mixture over the chicken pieces.
- Add the strained tomatoes, the turmeric and the curry powder.
- Stir well and cover with the chicken broth. Bring to a rolling boil and let simmer covered for 45 minutes until the chicken is tender.
- Taste and adjust the seasoning.
- Stir in the butternut squash.
- Cook for another 30 minutes until soft.
- Remove from the heat.
- Sprinkle with more cilantro and pistachios and serve warm.
