Chicken with Red Wine Cherry Sauce

Chicken with Red Wine Cherry Sauce

Ingredients
- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- 4 garlic cloves minced
- 1 small shallot finely diced
- 1/4 cup red wine like sherry
- 2 cups pitted frozen cherries
- 2 tbsp fresh parsley for garnish
Instructions
- Sprinkle the chicken breasts with salt and pepper to taste.
- Place them in a bowl and add the oil, balsamic vinegar and 2 minced garlic cloves.
- Rub them well and let marinate for 1 hour.
- Meanwhile prepare the sauce. Heat a saucepan on high and add the diced shallot with 1 tbsp of water.
- Lower the heat and cook until softened stirring occasionally (around 4 minutes).
- Add the remaining 2 minced garlic cloves and cook for an additional minute until fragrant.
- Add the wine and cherries and let simmer for about 10 minutes until the cherries are softened.
- Heat a skillet on high and add the marinated chicken breasts.
- Sear for about 8 minutes per each side making sure they are fully cooked (you can insert a meat thermometer to ensure that the internal temperature of each breast has reached 165 degrees F).
- Remove the skillet from the heat.
- Transfer the chicken breasts to a platter.
- Serve with the cherry sauce sprinkled with the parsley leaves.
