Chicken with Red Wine Cherry Sauce

Chicken with Red Wine Cherry Sauce

Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 4 garlic cloves minced
  • 1 small shallot finely diced
  • 1/4 cup red wine like sherry
  • 2 cups pitted frozen cherries
  • 2 tbsp fresh parsley for garnish

Instructions

  1. Sprinkle the chicken breasts with salt and pepper to taste.
  2. Place them in a bowl and add the oil, balsamic vinegar and 2 minced garlic cloves.
  3. Rub them well and let marinate for 1 hour.
  4. Meanwhile prepare the sauce. Heat a saucepan on high and add the diced shallot with 1 tbsp of water.
  5. Lower the heat and cook until softened stirring occasionally (around 4 minutes).
  6. Add the remaining 2 minced garlic cloves and cook for an additional minute until fragrant.
  7. Add the wine and cherries and let simmer for about 10 minutes until the cherries are softened.
  8. Heat a skillet on high and add the marinated chicken breasts.
  9. Sear for about 8 minutes per each side making sure they are fully cooked (you can insert a meat thermometer to ensure that the internal temperature of each breast has reached 165 degrees F).
  10. Remove the skillet from the heat.
  11. Transfer the chicken breasts to a platter.
  12. Serve with the cherry sauce sprinkled with the parsley leaves.
