Roasted Cherries chocolate Brownies
These Brownies are the ultimate bliss! Studded with roasted cherries and gooey chocolate chips, they are rich, decadent and irresistible.
Roasted Cherries chocolate Brownies
Yield: 16 Brownies
Ingredients
- 2 cups cherries pitted
- A sprinkle of sugar
- 1 1/2 cup sugar
- 2 eggs + 1 egg yolk
- 5 tbsp unsalted butter melted
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 3/4 all purpose flour
- 3/4 cup cocoa powder
- 1 tbsp corn starch
- 1 tsp salt
- 1 1/2 cups chocolate chips
Instructions
- Preheat the oven to 400 degrees F (200 C).
- Line a baking sheet with parchment paper and spread the cherries all over it.
- Sprinkle with some sugar and roast in the heated oven for 10 minutes. Remove the cherries from the oven and let cool. Lower the oven heat to 325 degrees F (162 C).
- Grease the bottom and sides of an 8x8 baking pan.
- In the bowl of an electric mixer, whisk the sugar with the eggs and egg yolk until light and fluffy( around 5 minutes).
- Add the melted butter, the vegetable oil and the vanilla. Mix until combined.
- In a separate bowl, sift the flour, cocoa powder, corn starch and salt.
- Fold the dry ingredients into the egg mixture then add half the roasted cherries and half the chocolate chips. Mix gently to combine.
- Spread the batter evenly in the prepared baking pan then top with the remaining cherries and chocolate chips.
- Bake in the heated oven for 40 minutes then take out and let cool at room temperature.
- Freeze for 10 minutes then slice.
- Serve with vanilla ice cream and enjoy!
