Roasted Cherries chocolate Brownies

These Brownies are the ultimate bliss! Studded with roasted cherries and gooey chocolate chips, they are rich, decadent and irresistible.

Roasted Cherries chocolate Brownies

Ingredients

  • 2 cups cherries pitted
  • A sprinkle of sugar
  • 1 1/2 cup sugar
  • 2 eggs + 1 egg yolk
  • 5 tbsp unsalted butter melted
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 3/4 all purpose flour
  • 3/4 cup cocoa powder
  • 1 tbsp corn starch
  • 1 tsp salt
  • 1 1/2 cups chocolate chips

Instructions

  1. Preheat the oven to 400 degrees F (200 C).
  2. Line a baking sheet with parchment paper and spread the cherries all over it.
  3. Sprinkle with some sugar and roast in the heated oven for 10 minutes. Remove the cherries from the oven and let cool. Lower the oven heat to 325 degrees F (162 C).
  4. Grease the bottom and sides of an 8x8 baking pan.
  5. In the bowl of an electric mixer, whisk the sugar with the eggs and egg yolk until light and fluffy( around 5 minutes).
  6. Add the melted butter, the vegetable oil and the vanilla. Mix until combined.
  7. In a separate bowl, sift the flour, cocoa powder, corn starch and salt.
  8. Fold the dry ingredients into the egg mixture then add half the roasted cherries and half the chocolate chips. Mix gently to combine.
  9. Spread the batter evenly in the prepared baking pan then top with the remaining cherries and chocolate chips.
  10. Bake in the heated oven for 40 minutes then take out and let cool at room temperature.
  11. Freeze for 10 minutes then slice.
  12. Serve with vanilla ice cream and enjoy!
