Raspberry Gratins

Tender fragrant raspberries are covered with a smooth velvety sabayon sauce and grilled to perfection to yield this delightful dessert that showcases those summer gems at their best!

Raspberry Gratins

Ingredients

  • 8 egg yolks
  • 2/3 cup sugar
  • 1 cup sweet dessert wine
  • 1/2 tsp vanilla extract
  • 4 cups fresh raspberries
  • More sugar for caramelizing

Instructions

  1. Preheat the broiler of your oven.
  2. Place the rack 5 inches away from the heat.
  3. Place the egg yolks in a bowl placed over a pan of simmering water.
  4. Add the sugar to the eggs and whisk constantly until you get a thick smooth mixture (about 5 minutes).
  5. Slowly whisk in the sweet wine (you could also use grape juice) and continue whisking over the simmering water for another 5 minutes.
  6. Whisk in the vanilla and remove from the heat. Set aside.
  7. Fill the bottoms of 4 ramekins or gratin dishes (7 inches more or less each) with a layer of raspberries (each ramekin should fit 1 cup).
  8. Spoon enough sabayon sauce to cover the raspberries.
  9. Sprinkle each one lightly with granulated sugar and place under the broiler for 2 to 3 minutes until the top is golden brown.
  10. Remove from the oven.
  11. Serve warm or cold and enjoy!
