Chocolate Fig Cake

This cake will for sure make you fall in love with it! Super moist and gooey, you will not be able to stop your fork from digging right into it! The mix of dried and fresh figs lends it a natural sweetness and blends beautifully with the bitter cocoa powder. An absolute divine bliss!

Ingredients

  • 3/4 cup flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/2 cup butter melted and cooled at room temperature
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 cup bittersweet chocolate
  • 1/4 cup dried figs chopped
  • 1 1/2 cups fresh figs sliced into rounds

Instructions

  1. Preheat the oven to 350 degrees F(175 C).
  2. Grease the bottom of a 9 inch loaf cake pan and line it with parchment paper.
  3. Sift the flour, cocoa powder, baking powder and salt in a bowl and set aside.
  4. In the bowl of an electric mixer, mix the sugar with the butter then add the eggs one at a time followed by the vanilla.
  5. Beat at medium high speed for 2 minutes until light and fluffy.
  6. Fold in gently the flour mixture followed by the chocolate chips.
  7. Mix in the dried figs and 1/2 cup of the sliced fresh figs.
  8. Pour the batter into the prepared pan.
  9. Arrange the remaining fresh figs in a decorative pattern on top of the batter.
  10. Bake in the heated oven for 30 minutes (it will be set around the edges but wiggly in the center).
  11. Remove the pan from the oven and let rest at room temperature until it cools down.
  12. Remove the cake from the pan and transfer it to a serving platter.
  13. Sprinkle with powdered sugar, slice, serve and enjoy!
