Panettone
Panettone is a traditional Italian sweet bread enjoyed during the holiday season. It is an aromatic cake with a texture as fluffy and soft as a cloud, usually studded with sultana raisins and candied fruits. Here I went for the chocolate chips and orange zest option so the outcome was a delectable rich cake with an intense uplifting aroma, unleashed with every slice.

Ingredients
- 1 packet of yeast
- 1 cup of warm water
- 1 cup of warm milk
- 1 cup of sugar + 1 tbsp
- 2 eggs
- A pinch of salt
- 3/4 tsp vanilla extract
- Zest of 1 orange
- 1/3 cup butter melted
- 5 1/2 cup flour
- 1 cup chocolate chips
Instructions
- In a small bowl, mix the yeast with the water, milk and 1 tbsp sugar. Let sit for around 10 minutes until it becomes super foamy.
- Mix in the remaining sugar, 1 egg, salt, vanilla , orange zest and melted butter.
- Transfer the mixture to the bowl of an electric mixer with the hook attachment.
- On low speed, slowly and gradually stir in the flour. Knead for 10 minutes then transfer the dough to a greased bowl.
- Cover with plastic wrap and a kitchen towel and let sit for at least 2 hours or until it doubles in size in a warm place.
- Fold in the chocolate chips then transfer the dough to a panettone mold and brush the surface with some melted butter so that is stays moist.
- Cover with a plastic wrap and a kitchen towel again and let sit for an additional hour or two until the dough rises again.
- Preheat the oven to 350 degrees F (176 C).
- Whisk the remaining egg with 1 tbsp water and spread the wash over the panettone. Sprinkle with some sugar and place in the heated oven.
- Bake for about 60 minutes until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool completely before slicing.
- Serve and enjoy!
