Kafta in a Tray

This dish is homey and comforting. A thin layer of savory ground meat is topped with juicy tomato slices and baked till tender and moist in a succulent tahini pomegranate sauce. The ultimate goodness in a tray!

Kafta in a Tray

Ingredients

  • 1 1/2 pounds ground meat (beef, lamb, turkey…)
  • 1 onion finely chopped
  • 2 cups fresh parsley finely chopped
  • 1 tbsp ground allspice
  • 1 tsp paprika
  • 1 tsp ground cinnamon
  • 1 tomato grated
  • Salt and pepper to taste
  • 4 tomatoes thinly sliced
  • 3 tbsp tahini
  • Juice of 1 lemon
  • 2 tbsp pomegranate molasses

Instructions

  1. Preheat the oven to 400 degrees F (200 C).
  2. In a large bowl knead the meat with the onion, parsley, allspice, paprika, cinnamon, tomato and salt and pepper.
  3. Make sure all the ingredients are well combined.
  4. Spread the meat mixture evenly over the bottom of a round baking dish.
  5. Arrange the tomato slices in a circular motion over the meat.
  6. Bake in the heated oven for 20 minutes then remove and carefully pour the meat juices into a small saucepan.
  7. Add the tahini, lemon juice and pomegranate molasses to the saucepan with the meat juices and whisk the mixture over high heat until it comes to a boil.
  8. Pour the sauce over the Kafta and return to the oven.
  9. Turn on the broiler and broil for 15 minutes until the tomatoes start to char.
  10. Remove from the oven and serve warm with a side of baked potatoes or a green salad and yogurt.
