Scallops with Peas Cilantro Sauce
Sweet delicious scallops lie on a bed of a vibrant smooth green sauce to create a healthy impressive meal that you can put on the table in less than 10 minutes.

Ingredients
- 2 1//2 cups frozen peas
- 1/4 cup fresh cilantro leaves
- 1 garlic clove minced
- Zest and juice of 1 lemon
- Salt and pepper to tastes
- 1 1/2 pounds large sea scallops
- Raw pistachios for garnish
Instructions
- Blanch the peas for around 3 minutes in a large pot of salted boiling water.
- Reserve 1/2 cup of the peas and transfer the remaining amount into a blender.
- Add 1/2 cup water and blend until creamy.
- Add the cilantro leaves, garlic, lemon juice and zest and salt and pepper to taste.
- Blend some more until smooth. Set aside.
- Spray a large skillet with olive oil and heat on high.
- Pat dry the scallops thoroughly and sprinkle with salt and pepper.
- Sear for 2 minutes on each side.
- Transfer the green purée to a platter then lay the scallops on top.
- Sprinkle with the reserved blanched peas and some pistachios.
