Scallops with Peas Cilantro Sauce

Sweet delicious scallops lie on a bed of a vibrant smooth green sauce to create a healthy impressive meal that you can put on the table in less than 10 minutes.

Ingredients

  • 2 1//2 cups frozen peas
  • 1/4 cup fresh cilantro leaves
  • 1 garlic clove minced
  • Zest and juice of 1 lemon
  • Salt and pepper to tastes
  • 1 1/2 pounds large sea scallops
  • Raw pistachios for garnish

Instructions

  1. Blanch the peas for around 3 minutes in a large pot of salted boiling water.
  2. Reserve 1/2 cup of the peas and transfer the remaining amount into a blender.
  3. Add 1/2 cup water and blend until creamy.
  4. Add the cilantro leaves, garlic, lemon juice and zest and salt and pepper to taste.
  5. Blend some more until smooth. Set aside.
  6. Spray a large skillet with olive oil and heat on high.
  7. Pat dry the scallops thoroughly and sprinkle with salt and pepper.
  8. Sear for 2 minutes on each side.
  9. Transfer the green purée to a platter then lay the scallops on top.
  10. Sprinkle with the reserved blanched peas and some pistachios.
