Strawberry Loaf Cake

This moist fluffy cake is bursting with fresh fragrant strawberry flavor. Beautiful, delicious and incredibly light, it will surely become a favorite!

Ingredients

  • 1 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 3 eggs
  • 1 cup sugar
  • Zest of 1 lemon
  • 1 tsp vanilla
  • 1 cup Greek yogurt
  • 1/2 cup vegetable oil
  • 2 cups fresh strawberries (1 1/2 diced and 1/2 cup sliced)

Instructions

  1. Preheat the oven to 350 degrees F(176 C).
  2. Grease a loaf pan with butter and set aside.
  3. In a bowl, mix the flour with the baking powder and salt and set aside.
  4. In the bowl of an electric mixer, mix the eggs with the sugar until light.
  5. Add the lemon zest and vanilla followed by the Greek yogurt. Mix until combined.
  6. Stir in the vegetable oil then fold in the dry ingredients.
  7. Add the diced strawberries to the batter and mix well.
  8. Pour the batter in the prepared loaf pan then gently insert the strawberry slices over the top of the batter.
  9. Bake in the heated oven for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and let sit in the pan for 15 minutes.
  11. Remove the cake from the pan and let cool completely at room temperature.
