Strawberry Loaf Cake

Strawberry Loaf Cake

Ingredients
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp sea salt
- 3 eggs
- 1 cup sugar
- Zest of 1 lemon
- 1 tsp vanilla
- 1 cup Greek yogurt
- 1/2 cup vegetable oil
- 2 cups fresh strawberries (1 1/2 diced and 1/2 cup sliced)
Instructions
- Preheat the oven to 350 degrees F(176 C).
- Grease a loaf pan with butter and set aside.
- In a bowl, mix the flour with the baking powder and salt and set aside.
- In the bowl of an electric mixer, mix the eggs with the sugar until light.
- Add the lemon zest and vanilla followed by the Greek yogurt. Mix until combined.
- Stir in the vegetable oil then fold in the dry ingredients.
- Add the diced strawberries to the batter and mix well.
- Pour the batter in the prepared loaf pan then gently insert the strawberry slices over the top of the batter.
- Bake in the heated oven for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let sit in the pan for 15 minutes.
- Remove the cake from the pan and let cool completely at room temperature.
